<p>Há doces que são presença obrigatória em qualquer mesa de Natal. Sua majestade o bolo rei é um deles. As versões são mais do que muitas e, muitas delas, tomadas como características das mais variadas confeitarias por esse Portugal fora. </p>

<p>Este ano decidi que a minha época natalícia iria começar na cozinha com a preparação desta iguaria. No entanto, como sei que as frutas cristalizadas dividem opiniões, e à ceia de Natal o que se quer é um momento de partilha, optei pela versão mais consensual: o bolo rainha, enriquecido apenas com frutos secos.</p>



<p>Para um bolo muito saboroso, o segredo é não ser comedido com os frutos secos, mesmo que na altura de amassar pareçam demasiados. Lembrem-se que, com a fermentação, a massa irá para o dobro do tamanho. Aqui a liberdade é a palavra de ordem. Façam a mistura conforme os vossos gostos e preferências. Nesta minha versão, juntei amêndoas, cajus, pistácios, nozes, nozes pecan, pinhões e avelãs. No fundo, um bocadinho de tudo o que tinha cá por casa. </p>



<p>Não se sintam intimidados com o ar pomposo deste bolo. É uma receita muito fácil de fazer, podendo ser resumir em poucas palavras: é juntar tudo, amassar e levar ao forno. Basta apenas reservar umas boas horas para a massa levedar com toda a calma. Guardem já esta receita e façam-na para a vossa consoada. Fatia a fatia, ele vai desaparecer num instante.</p>



<p>E mesmo que sobre algum bocadinho, torrado com manteiga é o melhor pequeno-almoço que podem pedir entre o natal e o ano novo. </p>

Reserve. </li><li id="wpzoom-rcb-direction-step-1702334482499704" class="direction-step">Numa tigela grande, misture o açúcar e a raspa da laranja e, com a ajuda das mãos, vá esfregando bem para soltar os óleos da casca. </li><li id="wpzoom-rcb-direction-step-1702334482499705" class="direction-step">De seguida, adicione os restantes ingredientes (à excepção dos frutos secos). Com o gancho da batedeira, amasse até obter uma massa lisa e brilhante. Forme uma bola e deixe levedar cerca de 90 minutos para duplicar o tamanho.</li><li id="wpzoom-rcb-direction-step-1702334482499706" class="direction-step">Coloque as sultanas numa taça e cubra com um pouco de vinho de Porto (extra). Numa outra taça misture os frutos secos com as quantidades que mais gostar.</li><li id="wpzoom-rcb-direction-step-1702334482499707" class="direction-step">Quando a massa estiver lêveda, transfira-a para a bancada polvilhada com um pouco de farinha. Adicione os frutos secos (reserve uma parte para a decoração). Escorra as sultanas e junte-as à massa. Amasse um pouco para agregar tudo muito bem. Forme novamente uma bola e deixe repousa cerca de 15 minutos.</li><li id="wpzoom-rcb-direction-step-1702334482499708" class="direction-step">Abra um buraco no centro da massa, dando-lhe a forma de um anel. Coloque num tabuleiro forrado com papel vegetal e deixe levedar mais 1 hora. </li><li id="wpzoom-rcb-direction-step-1702334482499709" class="direction-step">Pincele com ovo batido e decore com os frutos secos reservados. Leve ao forno, pré-aquecido a 170º C, cerca de 30 minutos até estar dourada. </li><li id="wpzoom-rcb-direction-step-1702334482499710" class="direction-step">No final do tempo, pincele com o mel e polvilhe com um pouco de açúcar em pó. </li></ul>

<p>Embora a minha experiência em pastelaria seja mais na óptica do consumidor (guloso me confesso!),  preparei este bolo que combina na perfeição as nozes, as especiarias e o <em>cream cheese</em>.</p>



<p>É um bolo fofinho, húmido, cheio de sabor e muito fácil de fazer. E se até eu consegui, não vejo razões para vocês não fazerem o mesmo! Toca a anotar a receita e mãos na massa. Vai fazer um brilharete na vossa mesa de Natal, sem dúvida nenhuma.</p>

Na taça da batedeira, coloque o açúcar, ovos e o óleo e bata durante 5 minutos.</li><li id="wpzoom-rcb-direction-step-110" class="direction-step">Numa taça à parte, junte a farinha peneirada, o bicarbonato, o fermento, a canela, o gengibre, o extrato de baunilha e o sal. Adicione aos poucos à mistura anterior e bata em velocidade baixa, só até ficar tudo ligado.</li><li id="wpzoom-rcb-direction-step-329" class="direction-step">Pique grosseiramente metade do miolo de noz. Adicione ao preparado, juntamente com a cenoura ralada. Envolva tudo com uma espátula.</li><li id="wpzoom-rcb-direction-step-461" class="direction-step">Verta a massa em duas formas redondas de 16 cm (previamente untadas com manteiga e farinha). Leve ao forno a 180º C durante 40 minutos ou até um palito sair seco do interior do bolo.</li><li id="wpzoom-rcb-direction-step-635" class="direction-step">Para o recheio, coloque a manteiga numa taça e bata com a batedeira até ficar macia. Junte o queijo creme e misture até ligar. Adicione o açúcar e continue a bater para obter um creme liso. Se desejar, pode adicionar metade da noz restante. Coloque uma camada de bolo num prato, espalhe um pouco do creme, outra camada e assim sucessivamente. No final, cubra todo o bolo com o creme que sobrou e leve ao frigorífico para endurecer. Decore a gosto, utilizando as restantes nozes picadas.</li></ul>

<p>Vai daí, decidi hoje trazer-vos uma sugestão bem a propósito. É certo que há casamentos perfeitos, mas a combinação da pera com o queijo gorgonzola está para lá de incrível. Não é por acaso que são tão frequentemente visto juntos em muitos pratos italianos. A doçura da pera equilibra com o salgado do queijo e dos dois nasce uma receita irresistível para desfrutar nas noites aconchegantes de outono.</p>

Escorra a massa, reservando ½ chávena da água da cozedura. .</li><li id="wpzoom-rcb-direction-step-1701345340385475" class="direction-step">Enquanto a massa cozinha, coloque uma frigideira grande e funda em fogo médio. Adicione as nozes e deixe torrar, mexendo ocasionalmente, até ficarem levemente douradas, cerca de 5 minutos. Transfira-as imediatamente para um prato, para que não queimem e limpe a frigideira.</li><li id="wpzoom-rcb-direction-step-1701345340385476" class="direction-step">Coloque a frigideira de volta ao lume e adicione a manteiga. Assim que derreter, acrescente as peras. Deixe cozinhar, virando-as ocasionalmente, até que estejam levemente douradas e macias, mas não moles. Deve demorar cerca de 5 minutos. Transfira cuidadosamente as peras para um prato, deixando o máximo de líquido possível na frigideira.</li><li id="wpzoom-rcb-direction-step-1701345340385477" class="direction-step">Adicione o caldo e raspe o fundo da frigideira para tirar os pedaços que possam ter se acumulado. Junte o queijo e reduza o lume, mexendo até derreter e o molho engrossar um pouco. Este processo deve demorar cerca de 5 minutos.</li><li id="wpzoom-rcb-direction-step-1701345340385478" class="direction-step">Acrescente a massa e ¼ de chávena da água reservada. Mexa para cobrir o tagliatelle com o molho. Se achar necessário, adicione o restante da água, pouco a pouco. A textura deve ser cremosa e fluida, não pastosa.</li><li id="wpzoom-rcb-direction-step-1701345340385479" class="direction-step">Divida a massa pelos pratos, acrescente as peras, as nozes e os arandos. Polvilhe com um pouco mais de gorgonzola. Tempere com pimenta e sirva.</li></ul>

<p>Um destes dias, para o almoço, decidi dar destino a uma manga não muito madura e aproveitar uns lombos de salmão. </p>



<p>O salmão é um daqueles ingredientes que procuro ter de forma regular no congelador. Este é um peixe que se cozinha muito rapidamente e por isso, muito descomplicado.</p>
