<p>E como o que é simples nunca falha, esta será, talvez, uma das razões que explica o sucesso que a gastronomia deste país mediterrânico tem em qualquer parte do mundo. Não é à toa que se costuma dizer que o mundo se divide entre <em>pasta</em> e <em>pizza</em>.</p>



<p>No entanto, se da <em>pizza</em> não há muito para falar, quando o assunto é pasta todo um universo se abre para lá do <em>spaghetti</em>.</p>



<p>Os canelones, ou <em>cannelloni</em> na língua original, são pequenos tubos de massa que oferecem uma enorme versatilidade. O seu interior oco permite ser recheado com diversos sabores à medida da gula de cada um.</p>

<p>A combinação cremosa de espinafre e queijo ricotta é uma das minhas preferidas. Há quem os sirva acompanhados com molho bechamel (com nesta minha <a href="https://www.luismiguelcosta.pt/massas/canelones-com-espinafres-e-ricota/">versão</a>), mas desta vez optei por um rico molho de tomate mais conhecido por <strong>molho <em>marinara</em></strong>. E este é o segredo do sucesso desta receita.</p>



<p>Olhando para os ingredientes, quase caímos na tentação de dizer que este é um simples molho feito com tomate. Contudo, é muito mais do que isso. A grande diferença é que o clássico molho de tomate precisa de cozinhar por muito mais tempo (e, portanto, de reduzir mais), resultando num molho mais espesso, quase cremoso. Por usa vez, o molho <em>marinara</em> geralmente ferve em apenas 20 minutos, o que lhe permite ter uma textura macia e levemente grossa devido ao esmagamento manual do tomate.</p>

<p>E agora um <em><strong>plot twist</strong></em>: se estiverem sem paciência para encher os tubos de massa, este prato também pode ser transformado em lasanha. Para isso, depois da preparação do recheio de espinafres e ricotta, é só colocarem as folhas de lasanha fresca em camadas alternadas e cobrir com queijo ralado.</p>
