<p>Como já vos confidenciei, nos últimos tempos, tenho tentando incluir no meu dia a dia mais refeições vegetarianas. Não estou numa fase de transição na minha alimentação. Nada disso. Apenas começo a sentir necessidade de procurar um equilíbrio com opções mais saudáveis.</p>



<p>A receita que partilho hoje convosco resultou exactamente dessa procura por petiscos mais nutritivos que, embora vegetarianos, não deixem de ser saborosos. A quinoa e o bulgur são ingredientes que entraram há pouco tempo na minha cozinha mas que já vêm conquistando algum protagonismo. O seu sabor está entre o arroz e a massa e abrem todo um mundo de possibilidades culinárias. Desta vez, decidi juntá-los num dueto um tanto ou quanto improvável.&nbsp;</p>

<p>Estes croquetes de quinoa, bulgur e cenoura são deliciosos, fáceis de fazer e carregados de sabor. Com uma crosta crocante, mas um interior tenro, são perfeitos para substituir os tradicionais croquetes de carne. E o melhor de tudo é que podem ser feitos no forno, o que os torna ainda mais saudáveis.&nbsp;</p>



<p>Pode consumir estes croquetes quentes como frios, o que significa que podem ser um snack a meio da tarde ou uma refeição completa. &nbsp;</p>



<p>Além de um molho <em>tzatziki</em>, acompanhei com uma salada de rúcula, pepino, sorrel dos bosques e ervas azedas.&nbsp;</p>



<p>Afinal, quem disse que as refeições vegetarianas têm que ser aborrecidas?</p>

Deixe reservar durante 15 minutos, até ficar com uma consistência parecida com a de ovo.</li><li id="wpzoom-rcb-direction-step-65a194ba4720e" class="direction-step">Numa tigela, junte os restantes ingredientes dos croquetes e misture.</li><li id="wpzoom-rcb-direction-step-65a194ba4720f" class="direction-step">Adicione o “ovo” de linhaça e mexa bem.</li><li id="wpzoom-rcb-direction-step-65a194ba47210" class="direction-step">Deixe a massa descansar uns minutos, enquanto pré-aquece o forno a 190º C.</li><li id="wpzoom-rcb-direction-step-170508829747154" class="direction-step">Com as mãos ligeiramente húmidas, coloque uma porção pequena da massa nas mãos (cerca de 60g) e vá apertando com força até conseguir moldar em forma de croquete.
