Deixe demolhar por 6 horas ou durante a noite. Por fim, descarte a água da demolha e volte a lavar os grãos.</li><li id="wpzoom-rcb-direction-step-1703966015928331" class="direction-step">Num tacho, leve a água ao lume com metade do sal e assim que ferver incorpore o arroz, 3 colheres de azeite e dois alhos esmagados sem casca.</li><li id="wpzoom-rcb-direction-step-1703966025082356" class="direction-step">Deixe cozinhar em lume brando cerca de 30 minutos. A meio do tempo, acrescente mais água se achar necessário. Retire do lume e deixe repousar.</li><li id="wpzoom-rcb-direction-step-1703966033097381" class="direction-step">Corte os legumes em pedaços pequenos mais ou menos todos do mesmo tamanho.</li><li id="wpzoom-rcb-direction-step-1703966058783422" class="direction-step">Numa frigideira grande, deite 3 colheres de azeite, juntamente com a cebola. Deixe refogar até começar a ganhar cor. Nesta altura, acrescente o pimento e cozinhe mais uns minutos.</li><li id="wpzoom-rcb-direction-step-1703966063151431" class="direction-step">Segue-se a beringela e mais tarde a courgette. Por fim, adicione os pedaços de tomate. Tempere tudo com sal e orégãos a gosto.</li><li id="wpzoom-rcb-direction-step-1703966084769472" class="direction-step">No fundo de um tabuleiro que possa ir ao forno, disponha metade do arroz, seguido dos legumes salteados. Cubra com o restante arroz. <p>Não sei se acontece o mesmo convosco, mas nos primeiros dias do regresso ao trabalho sou inundado por uma preguiça enorme. Ainda estou naquela fase de descrença que as férias já terminaram e que voltamos à rotina por mais uns meses.</p>



<p>Como é óbvio, a vontade de ir para a cozinha também não é muita e só quero refeições fáceis, práticas e que não me ocupem muito tempo. </p>

<p>Vai daí, decidi partilhar convosco esta receita que está cheia de tudo o que o Verão tem de melhor para oferecer &#8211; beringela, ervas frescas, cogumelos, tomates e pimentos.&nbsp;</p>

<p>Tenho a certeza que vão adorar esta celebração aos vegetais de Verão, que começa no fogão e termina no forno. É reconfortante sem pesar, (quase) vegetariano mas saciante, e tem muuuuito queijo (que é sempre uma forma infalível de me fazer comer um monte de legumes sem torcer o nariz).&nbsp;</p>



<p>Podem servir como acompanhamento ou prato principal &#8211; é perfeito de qualquer maneira. Podem adicionar um pouco de massa ou até mesmo acompanhado de frango, porco ou de um bife. </p>

Adicione a cebola picada grosseiramente e cozinhe por cerca de 3 minutos, sem deixar dourar. De seguida, junte o pimento cortado em cubos e os alhos picados e deixe cozinhar mais uns minutos.</li><li id="wpzoom-rcb-direction-step-65a189bbb6d96" class="direction-step">Adicione os cogumelos laminados e cozinhe-os até que comecem a libertar a humidade (cerca de 3 a 4 minutos). Por fim, adicione os tomates e as ervas aromáticas. Alguns minutos depois, retire a mistura para uma tigela grande e reserve.</li><li id="wpzoom-rcb-direction-step-65a189bbb6d97" class="direction-step">Na mesma frigideira, aqueça o óleo vegetal e a seguir acrescente a beringela e o sal.
