<p>Há pratos que aquecem o estômago e outros que aquecem a alma. O caril tem a proeza de fazer as duas coisas. Cremoso, aromático e mais ou menos picante, é daqueles pratos com um toque exótico que nos faz viajar sem sair da cozinha.&nbsp;</p>



<p>Nesta versão, usei o queijo para grelhar, uma novidade da <a href="https://president.pt/produtos/hot-cheese/#queijo-grelhar" target="_blank" rel="noreferrer noopener">Président</a>, e quebrei fronteiras ao juntar duas culturas geograficamente tão separadas.&nbsp;</p>



<p>Se ainda não experimentaram, preparem-se: este prato dá mesmo água na boca.</p>

<h3 class="wp-block-heading"><strong>O que é afinal o caril?</strong></h3>



<p>A palavra “caril” (ou <em>curry</em>) é usada de forma genérica para descrever pratos com molho rico em especiarias, muito comuns no sul da Ásia, especialmente na Índia.</p>



<p>Este não é apenas um “pó amarelo”, mas sim uma combinação de especiarias que, dependendo da região e da receita, pode levar curcuma, cominhos, coentros, gengibre, pimenta, cardamomo… Portanto, “caril” não é uma receita fixa mas um universo de sabores.&nbsp;</p>



<p>O resultado? Um prato quente, aromático e cheio de camadas de sabor. Pode ser suave ou picante, sempre bastante cremoso graças ao leite de coco e pode adaptar-se a quase tudo — legumes, carne, peixe… e queijo.</p>

<h3 class="wp-block-heading"><strong>E o que é o queijo halloumi?</strong></h3>



<p>Nesta versão, o protagonista são os pedaços dourados de queijo. Pura tentação. Contudo, não pode ser um queijo qualquer.&nbsp;</p>



<p>O queijo halloumi é tradicional de Chipre e muito popular em todo o Mediterrâneo. É feito normalmente com uma mistura de leite de cabra e ovelha (às vezes também vaca) e tem uma característica muito especial: não derrete facilmente.</p>



<p>Isso mesmo. Pode ser grelhado ou frito que ele mantém a forma, criando uma crosta dourada por fora e ficando macio por dentro. A textura é firme, ligeiramente elástica, e o sabor é suave mas salgado na medida certa.</p>

<p>É o queijo perfeito para ganhar aquela camada estaladiça que faz toda a diferença, sem esquecer que vai absorver todos os aromas do caril. Cada garfada tem contraste: cremosidade do molho, intensidade das especiarias e aquele “mordisco” satisfatório do queijo grelhado.</p>



<p>Como qualquer caril, pode servir com os acompanhamentos habituais: arroz basmati soltinho, pão naan quente e um pouco de iogurte natural para equilibrar o picante.&nbsp;</p>



<p>É daqueles pratos ideais para um jantar descontraído com amigos — simples de fazer, mas com aspeto e sabor de restaurante. A cozinha vai ficar a cheirar maravilhosamente bem e o prato vai desaparecer num instante.</p>

Retire e reserve.</li><li id="wpzoom-rcb-direction-step-69a17ce321c70" class="direction-step">Adicione o restante óleo à panela junto com a cebola picada finamente. Refogue em fogo baixo, por cerca de 5 minutos ou até amolecer.</li><li id="wpzoom-rcb-direction-step-69a17ce321c71" class="direction-step">Adicione o alho picado e o gengibre ralado finamente à panela. Cozinhe por mais 2 minutos, mexendo sempre, até que fiquem perfumados. Adicione os restantes temperos e cozinhe por mais 2 minutos para libertar os aromas.</li><li id="wpzoom-rcb-direction-step-177219130674541" class="direction-step">Despeje a polpa de tomate, juntamente com a água. Envolva tudo e deixe cozinhar por 10 minutos, sem tampa, em fogo médio/baixo.</li><li id="wpzoom-rcb-direction-step-177219130674542" class="direction-step">No final desse tempo, reduza o fogo e adicione o leite de coco. Mexa e cozinhe em fogo baixo por 3 a 4 minutos até engrossar.</li><li id="wpzoom-rcb-direction-step-177219130674543" class="direction-step">De seguida, adicione os espinafres, um punhado de cada vez, deixando-os murchar gradualmente. Misture bem e tape. Cozinhe por mais 5 minutos.</li><li id="wpzoom-rcb-direction-step-177219130674544" class="direction-step">Reduza o fogo e rectifique temperos, se necessário. Tenha em atenção para não abusar da quantidade de sal, pois o queijo já é bastante salgado. <p>Esta sopa de abóbora, de inspiração tailandesa, oferece uma experiência cheia de sabores e sem nenhum trabalho extra. Tem uma textura aveludada, é incrivelmente fácil de fazer e está repleta de especiarias quentes e picantes. O leite de coco e o açafrão dão profundidade, enquanto o gengibre e o sumo de lima acrescentam frescura. Uma viagem a cada colherada que não vão querer perder.</p>

<p>A temporada de ervilhas frescas está definitivamente no auge. Para quem tem o privilégio de ter horta em casa, certamente que os últimos dias têm sido passados a abrir vagens e a separar estas doces bolinhas verdes. E quando assim é, não há nada melhor do que aproveitar aquilo que a terra nos dá para preparar receitas que nos encham o palato.</p>

<p>Desta vez, optei por fazer uma sopa já a lembrar os tempos mais quentes. Embora muito simples, está repleta de sabores bem tradicionais.&nbsp;</p>



<p>Caso não encontram ervilhas frescas, não há problema. As congeladas são uma óptima alternativa, o que significa que podem fazer esta iguaria em qualquer época do ano (mesmo no meio do inverno).</p>



<p>A presença do chouriço dá uns pontos extra no resultado final, mas podem sempre omitir se procurarem uma receita mais <em>light</em>.&nbsp;</p>

Regue com um pouco de azeite e tempere com uma pitada de sal e pimenta moída na hora. Adicione as cebolas cortadas em meias luas e refogue por 5 minutos, até ficarem macias e translúcidas. De seguida, junte os dentes de alho e o gengibre ralado e cozinhe por mais 2-3 minutos.</li><li id="wpzoom-rcb-direction-step-1704144974208260" class="direction-step">Adicione a cenoura assada, o sumo de laranja, a água e o louro. Deixe ferver, reduza o fogo e deixe cozinhar por 20-30 minutos.</li><li id="wpzoom-rcb-direction-step-1704144974208261" class="direction-step">No final desse tempo, retire a folha de louro e passe a varinha mágica até ficar homogénea. Ferva cerca de 40 minutos em lume brando.</li><li id="wpzoom-rcb-direction-step-1701546376239361" class="direction-step">Depois deste tempo, retire o frango e triture o molho com uma varinha mágica.</li><li id="wpzoom-rcb-direction-step-1701546376240362" class="direction-step">De seguida, adicione o leite de coco e a abóbora e coloque de novo o frango no molho.
