<p>Quando o outono chega, com as suas temperaturas mais frescos e dias mais curtos, não há nada mais reconfortante do que recorrer a sobremesas que aquecem tanto o corpo como a alma. Entre as muitas delícias da estação, estas pêras assadas com especiarias, nozes e mel ganham destaque como uma sobremesa simples, mas incrivelmente aromática e cheia de sabor.</p>



<p>Na verdade, as pêras são uma fruta que simboliza perfeitamente o outono. Com a sua textura suculenta e adocicada, ficam ainda mais irresistíveis quando assadas, pois o calor do forno suaviza a sua polpa, intensificando os seus sabores. <p>A junção da canela, anis e cardamomo não apenas realça o sabor da fruta, como também cria uma sensação acolhedora e reconfortante.Por outro lado, as nozes são aquele elemento que torna essa sobremesa especial, já que a sua crocância contrasta na perfeição com a suavidade das pêras.</p>

			<ul class="directions-list"><li id="wpzoom-rcb-direction-step-6701b44a8ed8e" class="direction-step">Corte as peras ao meio e com a ajuda de uma faca retire o caroço central. </li><li id="wpzoom-rcb-direction-step-6701b44a8ed8f" class="direction-step">Coloque as metades das frutas num tabuleiro de forno. Adicione pequenos cubos de manteiga sobre as pêras.</li><li id="wpzoom-rcb-direction-step-6701b44a8ed90" class="direction-step">Disponha cada metade de noz onde o caroço foi removido. Regue as peras com mel. Adicione as especiarias no tabuleiro e despeje a água. Acrescente o sumo de limão e as rodelas de limão cortadas ao meio.</li><li id="wpzoom-rcb-direction-step-6701b44a8ed91" class="direction-step">Leve ao forno, pré-aquecido a 180 ºC, durante 45-50 minutos. Sirva quente, simples ou, se for mais guloso, acompanhado de iogurte, gelado ou chantilly. </li></ul>

Por fim, coza o arroz com 3 vezes quantidade de água.</li><li id="wpzoom-rcb-direction-step-152" class="direction-step">Descasque os pistácios e toste-os numa frigideira quente por 2 a 3 minutos, virando com frequência, até ficarem perfumados. Reserve.</li><li id="wpzoom-rcb-direction-step-285" class="direction-step">Corte a parte superior da abóbora, reservando a tampa. Descarte as sementes com uma colher grande. Se a cavidade interna for muito pequena, retire um pouco do interior e reserve.</li><li id="wpzoom-rcb-direction-step-464" class="direction-step">Coloque a abóbora numa assadeira, regue o seu interior com 2 colheres de azeite e tempere bem com sal. Leve ao forno, pré-aquecido a 180º C, por 50 minutos.</li><li id="wpzoom-rcb-direction-step-621" class="direction-step">Aqueça o restante azeite numa frigideira grande. Adicione a cebola picada e refogue por 10 minutos, até caramelizar levemente.</li><li id="wpzoom-rcb-direction-step-748" class="direction-step">De seguida, acrescente os alhos picados e o funcho fatiado em meias luas. Se reservou parte da abóbora, este é o momento de acrescentar ao refogado.</li><li id="wpzoom-rcb-direction-step-897" class="direction-step">Num almofariz, desfaça a malagueta e todas as especiarias. Acrescente à frigideira e deixe cozinhar por 3 minutos.</li><li id="wpzoom-rcb-direction-step-1012" class="direction-step">Por último, junte as sultanas, as passas, o arroz, a raspa da laranja e os pistácios e deixe tomar sabor por 10 minutos. Prove o arroz e rectifique os temperos se necessário.</li><li id="wpzoom-rcb-direction-step-1187" class="direction-step">Retire a abóbora do forno. Despeje a mistura do arroz no interior, regue a parte superior com um fio azeite e asse por mais 15-20 minutos ou até ficar bem quente. Sirva com alguns bagos de romã.</li></ul>

<p>Quem por aí gosta de húmus que levante o braço! Hoje trago-vos uma receita que vão querer guardar e repetir muitas vezes na vossa cozinha. </p>

<p>Frango shawarma é aquele prato que nos remete de imediato para o Médio Oriente. Coloque o frango numa taça e esfregue-o bem com esta mistura. Deixe marinar tapado por 30 minutos ou de um dia para o outro no frigorífico.</li><li id="wpzoom-rcb-direction-step-238" class="direction-step">Aqueça uma frigideira, em fogo médio, com um pouco de azeite. Tempere o frango com o sal e leve a grelhar até ficar cozido por completo de ambos os lados. Transfira para um prato e reserve.</li><li id="wpzoom-rcb-direction-step-428" class="direction-step">Entretanto, ferva 3 chávenas de água e coza as lentinhas por cerca de 20 minutos. No final, escorra a água que sobrar e reserve.</li><li id="wpzoom-rcb-direction-step-557" class="direction-step">No prato, espalhe uma camada generosa de húmus chili, coloque os canónigos e pepino, o frango fatiado, as lentinhas e o queijo feta esfarelado. <p>Estamos em plena época da ameixa e, ao que parece, tem tudo para ser um ano em grande para os seus apreciadores. Como as árvores estão carregadas de fruto (e isto de ter familiares com gosto em explorar a horta caseira tem as suas vantagens), um destes dias tinha na minha cozinha uma caixa com alguns quilos sem saber que destino lhes dar. Foi quando me lembrei de fazer este tea bread.&nbsp;</p>

<p>Os pães de chá, em tradução literal, estão a meio caminho entre um bolo e um pão de forma. São muito conhecidos na cultura inglesa e, como não requerem tempo de fermentação, tornam-se muito simples e rápidos de se fazer. São perfeitamente adaptáveis a várias versões e, o melhor de tudo, não são muito doces.&nbsp;</p>



<p>As ameixas frescas durante a cozedura acabam por se desfazer,&nbsp; salpicando o bolo de uma cor linda e de um sabor incrível. Acrescentei ainda um punhado de amêndoas torradas que lhe dá uma crocância surpreendente. O resultado é um bolo húmido e bastante perfumado com canela, cardamomo e gengibre. Perfeito para um pequeno-almoço a fugir à rotina ou a companhia ideal para uma chávena de chá a meio da tarde. &nbsp;</p>

<p>A melancia é o verdadeiro sucesso de verão. Dura por fora; macia e muito suculenta por dentro. São poucos os que não a adoram, e não há melhor para refrescar das altas temperaturas destes dias. No entanto, após consumirmos a polpa, quantos de nós acaba por deitar a casca no lixo? Diria que todos. Talvez por desconhecermos que ela é altamente nutritiva e igualmente rica em vitaminas.&nbsp;</p>

<p>Desta vez, partilho convosco uma óptima ideia para aproveitar o alimento por inteiro. Confesso que acho muito interessante esta ideia de que, por motivos culturais, acabamos por descartar partes de frutas que são óptimas do ponto de vista nutriticional só porque, em algum momento da história, se convencionou que eram lixo. Hoje, mais do que nunca, precisamos “mudar o chip” e ver o alimento com outros olhos.&nbsp;</p>



<p>Já alguma vez pensaram que as cascas da melancia podem ser o ponto de partida de um delicioso doce? Quem diria… Além de aumentar o aproveitamento dos frutos, evitando o desperdício, esta é uma excelente forma de resgatar as receitas tradicionais dos doces caseiros, que sabem sempre tão bem a acompanhar um pequeno almoço mais demorado. </p>

Desligue quando a casca ficar translúcida e macia. (Poderá ser necessário adicionar mais água durante esta etapa, uma vez que no final o nível do líquido deve estar ainda acima das cascas.)</li><li id="wpzoom-rcb-direction-step-65a0489600e6b" class="direction-step">Escorra os pedaços de casca numa peneira e reserve o líquido.</li><li id="wpzoom-rcb-direction-step-65a0489600e6c" class="direction-step">Leve de volta o líquido à panela, juntamente com o açúcar, mexendo sempre, em fogo médio, até que os grãos de açúcar derretam completamente.</li><li id="wpzoom-rcb-direction-step-1705003323451686" class="direction-step">Adicione o mel, o gengibre ralado e o vinagre. Retire as cascas à bagas de cardamomo, aproveitando apenas as sementes. Junte ao preparado.</li><li id="wpzoom-rcb-direction-step-1705003323451687" class="direction-step">Com a ajuda de um esmagador de batatas (ou de um robot de cozinha), triture levemente as cascas. O objetivo é ter pedaços mais pequenos, ainda com alguma textura.</li><li id="wpzoom-rcb-direction-step-1705003323451688" class="direction-step">Por fim, acrescente a casca à panela, mexa e continue cozinhando por cerca de 15 minutos aproximadamente. Se tiver um termómetro, será mais fácil para não ultrapassar os 110º C.</li><li id="wpzoom-rcb-direction-step-1705003323451689" class="direction-step">Retire do fogo e deixe o doce arrefecer completamente antes de transferir para um frasco.</li></ul>
